Directions
- Clean the chicken meat and cut it into pieces according to your preferred size, so it cooks evenly and absorbs the marinade well.
- In a bowl, prepare the marinade by mixing all the ingredients and stir well to balance the flavors.
- Add the meat to the marinade, carefully mix to coat it on all sides, then cover tightly and store in the refrigerator for at least 6 hours, ideally overnight for a more intense flavor.
- Meanwhile, prepare the tzatziki – clean the cucumber, peel it if necessary, and grate it coarsely.
- Remove excess water from the grated cucumber, ideally squeezing it through a sieve or a clean towel, so the dip is not too runny.
- Mix the cucumber with yogurt and the other ingredients, stir well, and store in the refrigerator, where the flavors will beautifully blend and enhance.
- Cook the marinated meat in an air fryer at 180 °C for about 25 minutes, until golden, juicy, and fully cooked.
- Just before serving, briefly grill the pita bread on a grill or in a dry pan, so it is slightly crispy and warm, and serve it together with the meat and tzatziki.
